Edible Flowers: The petals can be enjoyed fresh or dried in "flower confetti," soups, soufflés, rice dishes, baked goods, and as a garnish for desserts. Calendula is a favorite for adding color to salad mixes, with a tangy, slightly bitter flavor. Be sure to remove the petals from the flower base before consuming, as the base can be quite bitter.
